This creamy delicious low carb chicken thigh with mushroom sauce is quick and easy to make, as well as very healthy for the whole family.



To prepare Chicken Thighs

  • 6 fillets of boneless, skinless chicken thighs
  • 1 Lemon Juice
  • 2 cloves Garlic (minced)
  • 1 tsp Dried Thyme
  • 1 tsp Rosemary
  • 1/2 tsp Cracked Black Pepper
  • 2 tbsp Olive Oil

To prepare the Creamy Mushrooms Sauce

  • 1 tbsp Olive Oil
  • 250 grams Sliced Fresh Mushrooms
  • 2 cloves Garlic (minced)
  • 1 tsp Fresh Parsley (chopped)
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 1 cup Heavy Cream
  • 1 tsp Nutmeg
  • Black Pepper & Salt
  • 1/2 cup Fresh Parmesan Cheese (shredded)


  1. To make the chicken thighs, dry the chicken thighs using a paper towel, then trim off any excess fat. Next, add in salt and lemon juice as seasoning into the chicken thighs and set aside for fifteen minutes to let the chicken thigh absorb the lemon juice
  2. Next, mix the thyme, garlic cloves, pepper, and rosemary. Then coat the chicken with the seasoning mix
  3. Next, heat one tablespoon of oil in a large skillet over medium heat then sear the chicken thighs until each side is browned, about eight minutes on each side
  4. Put the chicken in a plate and keep aside
  5. To make the creamy mushroom sauce, add in mushrooms and olive oil into the skillet and then add in pepper and salt as seasoning and cook until soft
  6. Add in the garlic, thyme, parsley, and rosemary and saute until it is fragrant. Then add in the heavy cream, stir, and bring to a simmer
  7. Reduce the heat and then keep cooking until the sauce thickens, then add in the nutmeg and then the parmesan cheese. Let it melt through the sauce for about four minutes while stirring occasionally
  8. Transfer the chicken to the pan and then season with pepper and salt. Garnish with parmesan cheese and parsley. Then serve.
